Easy Ground Turkey Grain Bowl
I always see these super colorful, delicious-looking grain bowls popping up on social media. I think to myself, I’d loooooove to make that, but the prep looks pretty intensive! With four little ones underfoot, I really need dinner prep to be minimal. Plus, my best attempts to keep fresh veggies on hand is typically in vain. Like, I’m one of those just-bought-a-bag-of-spinach-to-throw-in-the-garbage gals. Not something I’m proud of…
Anyway, I was rooting through the freezer last week and found myself pulling out a bag of frozen sweet potatoes and a bag of seasoned quinoa. Stop the world! THESE WOULD BE GREAT IN A GRAIN BOWL! Why hadn’t I thought of this before?!
Shop the Freezer and Pantry
I opened the pantry and looked for a few canned items that I knew would pair well. Black beans and chickpeas for the win. Previously, I’d thawed some ground turkey, so I threw some taco seasoning on that and cooked it stovetop. That was the most “prep” I had to do. I mean, besides microwaving the frozen goods. 😂 I didn’t even warm up the beans or chickpeas, figuring the heat from the ground turkey and microwaved items would be enough. (PS. If you haven’t tried this magic meat masher yet, it’s amazing. Works great for crumbling ground meat to perfection.)
We had some feta and shredded cheddar on hand, so I threw that on the top. Oh, also dressing! Whatever you fancy, put that on there, too. And, voila! an easy ground turkey grain bowl took shape. IT WAS SO TASTY!
Serving the Kids
I knew my kids would prefer the ‘deconstructed’ version, so I just portioned it out in a little line on their plates. They LOVED having shredded cheddar on its own! We get to eat this by itself?! I aim to please, friends.
Leftovers
This made a GREAT lunch for the next day. I just popped it in the microwave for a couple of minutes, tossed on some feta and dressing and it was delish. HIghly recommend.
